Lentils for breakfast recipe

Lentils are a great alternative to beans, at breakfast time. They’re light, easily digested and tend to have a higher water content than beans. They’re high in fiber and can be used in a few different ways.
Lentils Breakfast 1: The Omelette Accompanist
This is a really simple one – and doesn’t take long at all.
Drop 1/3-1/2 cup red split lentils (dry) into a pot of boiling water.
Set your pan up on medium heat, cover in natural butter and
Grab 3-4 whole eggs, half a red pepper, a handful of spinach and blend it all.
Cook up the egg mix and stir the lentils.
Once lentils are soft (omelette is probably almost ready), drain them, add in 2 tbsp tomato salsa.
Serve up and enjoy!
Lentils Breakfast 2: Salmon salute
This recipe uses the lentils as a base.
Either start with canned lentils, or cook up some red split lentils (1/3 – 1/2 cup for about 10 mins).
Add in some broccoli, and some spinach into a pot with lentils.
Add spices to taste (I use a Mexican spices mix).
Cook up a frozen salmon filet with some lemon juice and pepper – I often use the microwave, or boil in a separate pot.
Serve together for an awesome combo that will wake up your taste buds!

And like I tell my clients – sometimes if you try combining the weirdest ingredients you get something that tastes really awesome, and makes breakfast a new adventure!
